Instructions
1. Preheat & Prep
Preheat your oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper or lightly grease it.
2. Make the Cookie Bar Dough
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add in the eggs and vanilla extract, mixing until well combined.
Fold in the flour, baking powder, and salt until just combined. Be careful not to overmix.
Gently fold in the Robin candy eggs and pastel chocolate candies.
3. Bake
Spread the dough evenly into the prepared baking dish. Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out mostly clean. Let cool completely before frosting.
4. Make the Frosting
In a medium bowl, beat the cream cheese until smooth.
Add in vanilla extract and powdered sugar, beating until fluffy. Add a splash of cream to loosen the frosting to a spreadable consistency. Tint with blue or green gel food coloring to create a robin egg hue.
5. Add Robin Speckles
Mix cocoa powder with a small amount of water to form a runny paint-like consistency.
Using a clean food-safe brush or toothbrush, gently flick the cocoa mixture over the frosted bars to create speckles.
6. Serve & Enjoy
Slice into bars and serve! These festive treats are perfect for spring gatherings, Easter brunches, or dessert tables.
